INGREDIENTS
1 cup (250 mL) raisins
1 small red onion, chopped
1/2 cup (125 mL) couscous
1 c. tsp (5 mL) salt
1 c. tsp (5 mL) curry
1 c. tsp (5 mL) ground cinnamon
3/4 cup (180 ml) of boiling water
1 lb (500 g) ground chicken or turkey
1 egg, lightly beaten
2 t (500 ml) of grape tomatoes
PREPARATION
1. In a large bowl, combine 1 cup (250 mL) raisins, half the onion, couscous, salt, curry powder and 1/2 tsp. tsp (2 mL) cinnamon. Pour 3/4 cup (180 ml) of boiling water over the preparation and cover the bowl with plastic wrap. Let stand for 2 minutes. Add the turkey and egg and mix well.
2. Divide mixture into four small turkey loaf pans. Bake on the top rack of a preheated oven at 450 ° F (230 ° C) for about 15 minutes or until meat loaves have longer pink inside.
3. Meanwhile, in a saucepan, combine the remaining raisins, onion, cinnamon and boiling water with tomatoes. Cover and cook over medium-high heat until the tomatoes are softened.
4. To serve, garnish meatloaf preparing tomatoes.
