INGREDIENTS
1 lb (500 g) marinated beef cubes
8 cherry tomatoes
1 large red onion, cut into pieces
1 green pepper, cut into pieces
2 cups (500 mL) couscous
2 t (500 ml) boiling water
2 c. to tab (30 mL) lemon juice
1/4 cup (60 mL) tzatziki
PREPARATION
1. Four metal or wooden skewers soaked in water, put the beef cubes. On four skewers, thread the vegetables. Prepare a medium-high intensity charcoal fire or set grill to medium-high emissions. Put the skewers on greased grill. Close the lid and cook for 12 to 14 minutes for medium-rare meat, or until desired doneness (return skewers once during cooking) and about 10 minutes for vegetable skewers. Book.
2. Meanwhile, in a bowl, put the couscous and pour boiling water over the couscous. Let stand 5 minutes, then season with lemon juice.
3. To serve, divide the couscous among 4 plates and top with a skewer of beef and a skewer of vegetables. Top each serving with tzatziki.
