]INGREDIENTS
1 cup (250 mL) baby spinach leaves
1/2 cup (125 mL) shredded radicchio
1 cup (250 mL) of cooked quinoa
10 seared scallops
1 orange, peeled raw and sliced
1 red onion, cut into thin strips
1/4 cup (60 mL) dried cranberries
Dressing orange and poppy seeds
PREPARATION
1. Divide the ingredients into two plates. Drizzle with dressing and toss.
variations:
Replace quinoa by a radical of rice, farro or cooked barley.
Replace with orange slices kiwi, strawberry or star fruit.
Replace scallops sauteed shrimp, or tuna or crab canned, drained.
