Lime Salmon Fillets

INGREDIENTS
4 salmon fillets with skin (about 1 1/2 lb / 750 g in total)
1 c. tsp (5 mL) dried thyme
1/4 tsp. tsp (1 mL) salt
1/4 tsp. tsp (1 mL) freshly ground black pepper
1 c. to tab (15 mL) butter
4 green onions, sliced
1 c. tsp (5 mL) finely grated lime zest
1 lime (or lemon) cut into wedges
PREPARATION
1. Sprinkle the skinless side of salmon fillets thyme, salt and pepper. In a skillet, melt butter over medium-high heat. Add the salmon fillets, skin on, and cook for about 4 minutes or until bottom is lightly browned nets.

2. Turn the salmon fillets and sprinkle with green onions and lime zest. Cook for 3 to 6 minutes or until the fish flakes easily with a fork. Serve with lime wedges.
