INGREDIENTS
cornmeal
1 lb (500g) of commercial pizza dough
4 c. tsp (20 mL) olive oil
2 Spanish onions sliced
2 red peppers cut into strips
3 cloves garlic, chopped
1 c. to tab (15 mL) dried oregano
1 pinch of sugar
1 c. to tab (15 mL) balsamic vinegar
1/2 cup (125 mL) sliced black olives
6 slices cooked bacon, crumbled
1 1/2 cups (375 ml) grated Parmesan or Gruyere
1/4 cup (60 mL) chopped fresh parsley
PREPARATION
1. On a work surface sprinkled with cornmeal, roll pizza dough into a rectangle measuring 15 x 8 inch (38 cm x 20 cm). Slide the pastry on a lightly oiled baking sheet.
2. In a skillet, heat oil over medium heat. Add onions, peppers, garlic, oregano and sugar and cook for about 20 minutes or until onions are caramelized. Add the balsamic vinegar and mix. Divide filling with onions on the pizza crust. Sprinkle olives, bacon and Swiss cheese.
3. Bake in preheated oven at 450ºF (230ºC) for about 15 minutes or until the pizza is lightly browned. Sprinkle with parsley
Makes 8 servings or 4 squares.
