INGREDIENTS
1 c. to tab (15 mL) grated orange zest
1/2 cup (125 mL) freshly squeezed orange juice
1/3 cup (80 mL) liquid honey
1/2 tsp. tsp (2 mL) hot pepper flakes
1/4 tsp. tsp (1 mL) salt
1/4 tsp. tsp (1 mL) pepper
8 chicken drumsticks, skin removed (about 2 lbs / 1 kg in all)
PREPARATION
1. In a large bowl, combine zest and orange juice, honey, hot pepper flakes, salt and pepper. Add the chicken drumsticks and return them to coat.
2. Remove the drumsticks from the marinade (reserving marinade) and lay side by side in a shallow baking dish. Pour marinade over chicken. Bake in preheated oven at 425 ° F (220 ° C) for about 30 minutes or until chicken is browned and glossy and the juice that flows out when pricked with a fork clear (brush drumsticks twice during cooking)
