INGREDIENTS
2 sweet potatoes, peeled and grated (1 lb / 500 g)
1 small grated onion
1 egg, beaten
1/4 cup (60 ml) of flour
1/2 tsp. tsp (2 mL) baking powder
1/3 cup (80 ml) of groundnut oil
salt and pepper
Mayonnaise Maple
PREPARATION
1. Wrap the sweet potato and onion in a clean cloth and squeeze dry. Put the vegetables in a large bowl. Add egg, flour and baking powder. Add salt and pepper and mix.
2. In a large skillet, heat 1 tbsp. to tab (15 ml) of oil over medium-high heat. Remove 1/4 cup (60 ml) of the preparation of potatoes at a time and cook 6 to 8 minutes or until the cookies are golden brown and crispy, pressing lightly with a fork (return them to the halfway). Keep warm. Cook the patties others the same way. (The cakes will keep overnight in the refrigerator. Reheat in oven to 350 ° F / 180 ° C for 10 minutes.) Serve with mayonnaise maple.
