Quinoa patties, yogurt sauce and lemon

INGREDIENTS

Yogurt sauce and lemon
375 ml (1 1/2 cup) plain yogurt (from Balkan type)
80 ml (1/3 cup) chopped green onions, thinly sliced
15 ml (1 tbsp.) Lemon juice
1 pinch of salt
1 pinch ground black pepper
Quinoa croquettes
375 ml (1 1/2 cup) rinsed and drained quinoa
375 ml (1 1/2 cup) chicken broth
375 ml (1 1/2 cup) water
125 ml (1/2 cup) olive oil
1/2 onion, chopped
3 cloves garlic, chopped finely
2 ml (1/2 tsp.) Salt
1 ml (1/4 tsp.) Of freshly ground black pepper
750 ml (3 cups) fresh spinach, trimmed
3 fresh eggs
60 ml (1/4 cup) grated Parmesan cheese
60 ml (1/4 cup) flour
7 ml (1 1/2 tsp.) Baking powder
1 ml (1/4 tsp.) Grated lemon zest
15 ml (1 tbsp.) Sesame seeds (pine nuts or almonds or sliced), toasted

PREPARATION

1. In a bowl, combine all ingredients. Refrigerate.
